“AUSTRALIAN CUISINE is on par with the finest the world has to offer. Dilmah is now challenging Australia’s chefs to use that culinary creativity, to craft an authentic High Tea.
Five regional competitions in Western Australia, South Australia, Victoria (including Tasmania), New South Wales and Queensland will be held during the course of the Dilmah Professional Real High Tea Challenge.

Culinary teams will consist of two from any recognised hotel, restaurant or hotel school in Australia, and must use the selection of Dilmah teas listed in the guidelines to produce original recipes and pairings. These will be assessed for originality, creativity, taste, respect and understanding of the specific tea, harmony of flavour and presentation and style.
Chefs Peter Kuruvita, Bernd Uber and Merrill’s son, Dilhan will judge entries in August, and a winner from each regional team will be awarded a weekend package for two at a Hilton Hotel as well as a free supply of Dilmah tea.
The top three winning teams from the overall competition will receive a prize trip to Sri Lanka for six days, including visits to the Dilmah Tea Gardens and a holiday at Ceylon Tea Trails where they will enjoy Relais & Chateaux hospitality at one of the world’s finest luxury resorts. During their visit the winning teams will showcase their Dilmah High Tea menu at a celebration at the Colombo Hilton’s Dilmah t-Bar. The Dilmah family and VIP guests will personally host the winners.
Winning recipes will be published in food magazines and Dilmah publications with the event being covered by food television channels in Australia.
