22 May 1970, East Hagbourne, Berkshire.
 
Favourite cheap eat?
Vietnamese. I love a Beef Pho with tendons and tripe – the absolute full monty.
 
What keeps you going?
My family. The school fees keep me working and the love makes it all worthwhile.
 
Advice to future young chefs?
Be passionate, and never be satisfied.
 
On classic vs modern cuisine?
I believe that you can\'t do the modern without knowing the classics. You need a firm understanding of classical techniques to be able to push the modern envelope. You’ve got to know where you come from to know where you’re going in my opinion.
 
How can we keep attracting chefs into the food-world?
We have to sell the bigger picture of professional cooking like the world of opportunities that it offers. Things like travel, cooking in totally different environments from on a luxury boat to being someone’s private chef to running a restaurant. There are so many different elements that you can be involved in like media, publishing and events.
 
Favourite sport?
Surfing. Most recently I caught some great waves in Fiji. My favourite spot in Australia is the Margaret River in WA.
 
Ingredient obsession?
Quinoa.
 
Purveyor tip?
Communication, talk to your purveyors, tell them what is wrong and don’t forget to tell them what is right.
